2 Lau lau
1 cup coconut milk
1 teaspoon ginger, grated
1 stalk lemongrass, pounded and sliced thin
1 red chili peper, sliced
salt and pepper to taste
1 tablespoon light brown sugar
Heat coconut milk and lau lau in pan and simmer for 15-20 minutes. Add ginger, lemongradd, chili pepper. Season with salt and pepper to taste, add sugar . Remove lau lau to individual bowls. Reduce coconut milk by half or thicken with 1/4 teaspoon cornstarch and pour over lau lau before serving.
