BARRETT AWAI'S HOT RICE, CORNED BEEF & NORI SEAWEED WRAPS
He won a Hoku award with the group Kaukahi and is a former football player for BYU. He currently works at Kamehameha Schools as an Assistant Kahu. This week he shares one of his favorite recipes with us for Corned Beef and Nori Seaweed Wrap.
3 cups steamed white rice (hot)
1 can corned beef, crumbled
½ cup mayonnaise
½ cup green onions, sliced
4 pkg nori seaweed strips (individual pack)
2 cups salted cucumbers
Preparation for Corned Beef:
Slice the green onions, then just after the rice is cooked and still hot, stir in the mayonnaise, corned beef & green onions.
Preparation for Cucumbers:
2 cups cucumbers
salt to taste
black pepper to taste
Slice the cucumbers, then in a bowl mix together all of the ingredients, let it sit for 10 minutes…ready to eat.
Serve with the nori strips & salted cucumbers to make personal seaweed.
