HARUSAME (BEAN STARCH VERMICELLI) SALAD
Actor, comedian and over all beautiful soul Amy Hill joined us in the Cooking Hawaiian Style kitchen. I have always been a fan of Amy since her role in Next Friday with Ice Cube as she played his neighbor. A lot of you might recognize her from Friends, Seinfeld, her voice on Lilo & Stitch and Kung Fu Panda, or from 50 First Dates or most recently as Kumu on Magnum PI.
She plays all kinds of Asian roles in television and on the big screen. Getting to know her off set is what you get on the screen. She has a great sense of humor and a fun loving personality. She is 1/2 Japanese and knows how to make some ono Japanese food. enjoy her Harusame Salad this week.
1 package (200g) Cold bean starch vermicelli
1 pink/white kamaboko roll
1/4 cup scallions
1/4 cup daikon sprouts
1/4 cup diced cucumbers
1/4 cup grated or julienned carrots
1/4 cup red sweet peppers
1/4 cup yellow tiny/cherry tomatoes
2 tbs mayonnaise
1 tbs rice vinegar
1 tbs raw sugar or agave
Salt and pepper to taste
Method of Preparation:
Boil dried vermicelli for 10-12 minutes, then drain and put in an ice bath to cool, then drain before use.
Mix mayonnaise, rice wine vinegar and sugar in a bowl, then let it rest.
Dice cucumbers, Julienne carrots, slice red sweet peppers, cut kamaboko fish cake, cut daikon sprouts, cut scallions.
Add cooked vermicelli in the dressing ingredients bowl and stir together.
