A lot of people don’t realize things that go into getting an episode ready. Things need to get purchased, prepped, sliced, diced, and plated. In this recipe Chef Jeff Vigilla shares his talents in front of the camera.

US Metric

2-8oz fillet, Kualoa ranch tilapia fillet (skin on, and scored)

½-tsp salt

½-tsp black pepper

3-tbl-olive oil (for searing)

2-pc Hawaiian chili pepper, crushed

2-sprig fresh thyme

2-sprig fresh rosemary

2-1/2-lemons

6-cloves garlic, skin on

1-sprig green onion

to finish

1-tbl Hawaiian chili pepper water

½-tsp sesame oil

1-tbl-soy sauce

2-tbl butter, sliced, cold


Cooking Process:

Method:

Score the skin side of the tilapia ¼ inch apart, season with salt & pepper. Heat a large skillet on high temperature add the olive oil, place the remaining ingredients into the skillet and heat for 30 seconds. Add tilapia fillets skin side down, reduce the heat slightly, after a minute cover the skillet and cook for an additional 2 minutes.

Remove the cover then add the chili pepper water, sesame oil & soy sauce, increase the heat then slowly in corporate the butter while basting the fish for 15-30 seconds the sauce should thicken.

Remove from the heat, arrange the fish onto a platter and spoon over the ingredients over the fish.
