Slow Cooker Oriental Long Rice Soup

2 tsp. vegetable oil

1 lb. ground or shredded chicken, turkey or pork

4 stalks green onions, chopped, whites only

4 TB ginger, grated

3 cloves garlic, minced

8 c. chicken broth

2 TB oyster sauce

Pinch red pepper flakes

4 oz. long rice, soaked, drained

2 c. spinach, washed

1 c. edamame, shelled

Garnish: 4 stalks green onion, chopped, green parts only

Cooking Process:

In a skillet over medium heat; brown meat, white of green onions, ginger and garlic in oil. Transfer into slow cooker with broth, oyster sauce and red pepper flakes. Cover and cook on high 3-4 hours. Add long rice, spinach and edamame and continue cooking 30 minutes. Stir in green parts of onions. Serves 6-8.
