SPINACH BACON DEVILED EGGS

Mika Miyashima is becoming a household name in Hawaii as she is responsible for delivering our weather on the weekends with KITV4. Born in Los Angeles California and raised in Utah, she earned her Bachelor’s Degree in Communications from the University of Hawaii and interned with the KITV sports team covering basketball and football games.

We are fascinated by Mika’s generosity and aloha as she has visited 20 different countries working with critically ill children.

 

We asked her if she could join us and cook one day and she said, "Not really, but I can make some deviled eggs, and one of my grandma’s recipes." So this week we were lucky to have her in between her busy schedule in the kitchen making her Spinach Bacon Deviled Eggs recipe.



Ingredients:

6 hard cooked eggs
¼ cup frozen chopped spinach, thawed drained squeezed dry
1/8 cup mayonnaise
1/8 cup real bacon bits
1 ½ tablespoon cider vinegar
1 tablespoon butter, softened
½ tablespoon sugar
1 teaspoon black pepper
1/8 teaspoon salt


Cooking Process:

1.Hard Boil the eggs
2. Cut eggs in half and mash yolks in a bowl
3. Combine yolks with spinach, mayo, bacon bits, sugar, black pepper, salt, cider
vinegar 4. Fill the whites with mixture
4. Top with bacon bits and sprinkle paprika
