  • Banana Bread Recipe
  • 2 large eggs
  • 3/4 cup sugar
  • 1/4 light brown sugar
  • 1/2 cup butter, melted
  • 2 large overripe bananas
  • 1/4 cup sour cream
  • 1 teaspoon vanilla
  • 1 tespoon green curry paste
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sweetened shredded coconut

Cooking Process:

To make this banana bread recipe, preheat oven to 350 degrees F.  Spray a loaf baking pan with  non-stick cooking spray.  In the bowl of a stand mixer on medium-high, cream together eggs and sugar slowly pour in butter.  Add bananas, sour cream, vanilla, and green curry paste.  Mix at medium speed until all ingredients are thoroughly incorporated.  Gently fold in flour, baking soda, salt and 3/4 of the shredded coconut.  Pour batter into prepared baking pan, using a spatula to spread the batter evenly in the pan.  Sprinkle top of loaf with remaining coconut.  Bake on the center rack in the oven until a toothpick inserted into the center of the cake comes out clean, roughly 1 hour.  Remove banana bread from oven.  Allow banana bread to cool completely on rack before removing from pan and serving.
