FILET MIGNON WITH SAUTÉED ONIONS

I don't get intimidated very often by the big name chefs but I have to admit, Sophia knows her way around the kitchen and commanded my attention, and I was happy to be her sous chef.

 

The Master Chef Jr shows always get me choked up during the eliminations and at the same time make me realize how much more I need to learn and how much talent is out there. This week Sophia shares her secrets on how to cook a perfect steak with her Filet Mignon with Sauteed Onions Dish.

US Metric

Filet Mignon with Sautéed Onions

2 filet mignon steaks

Kosher salt to taste

Pepper to taste

4 sprigs of Carrot Tops

½ cup salted butter

Grapeseed oil to cover pan for frying

Sautéed Onions

white onions cleaned and sliced

Salted butter

Kosher salt

Pepper

Scallions, finely diced (for garnish)


Cooking Process:

Filet Mignon with Sautéed Onions

Method:

1. Heat a cast-iron skillet to medium-high, just before the oil starts to smoke.


2. Heavily season all sides of the steak with salt and pepper, using about half as much pepper than salt.


3. Sear steak for about 1½ minutes on top and bottom, turn onto side and put at the edge of the pan, start rolling the steak. Cook for 35-45 seconds with each roll.


4. Flip steak on flat side and add enough butter to cover the bottom of the pan.


5. Tilt the pan and baste the steak, turning often to prevent uneven cooking. Keep basting and turning until it reaches your desired doneness.


6. When your steak is at the desired doneness, take your steak out and allow steak to rest on a plate.

 

Sautéed Onions

Method:

1. Heat non-stick skillet to medium-low heat.


2. Add butter, mushrooms, and a pinch of salt and pepper, stirring often.


3. The mushrooms are done when they turn brown.
