We've invited Barrett into our Cooking Hawaiian Style Kitchen to "chef" it up with our host Lanai. Lanai met Barrett during his radio days and says he was always the coolest, nicest guy. Here's one of Barrett's favorite recipes that he makes for his kids.

Pan Fried Kualoa Ranch Ulu

1-12oz beef rib-eye steak (Kualoa Ranch)

½-tsp Hawaiian sea salt

2-Tbl olive oil

2-Tbl butter

1-sprig fresh rosemary

1-sprig fresh thyme

4-cloves garlic, smashed

8-med large button mushrooms cut in half

Pan Fried “Ulu” (breadfruit)

6-wedges of steamed Ulu

2-Tbl olive oil

1-Tbl butter

½-tsp Hawaiian Salt

black pepper-to taste


Cooking Process:

Pan Fried Kualoa Ranch Ulu

Method:

Season the beef rib eye steak with salt & pepper on both sides.

Heat a heavy bottom skillet, add the olive, when the oil begins to smoke place the steak in sear the steak for 4 minutes then turn over, once you turn it over add the butter, thyme, rosemary & garlic cloves and mushrooms. Continue to cook for additional 4 minutes and baste the steak & turning mushrooms while tilting the pan toward you.

Remove from the heat and keep warm & rest the steak for at least 5 minutes before serving.

Pan Fried “Ulu” (breadfruit)

Method:

Place the Ulu into a large enough deep pot. Bring to a boil and simmer for 45 minutes to 1hour or until its tender enough when pierced with a knife.

Drain and let it cool slightly.

Cut the Ulu into 8-10 wedges remove the seeds and core, season with salt & pepper. Heat a skillet medium high heat, add the olive oil & butter place the wedges into the pan and brown on each side 4-5 minutes.
