AMAULU CHICKEN CURRY BY CHAD CABRAL

We were lucky enough to have a very special guest doing great things in the Hilo community visit Chad Cabral Amaulu Chicken Curryus in the Cooking Hawaiian style kitchen, Chad Cabral CEO of the Boys and Girls Club of the Big Island. Chad created an after school program to feed kids who need meals. The program costs families $10 a year and he has figured out a way to get the rest covered through donations.

 

They are not just providing snacks but hot meals with a kitchen that is funded by federal grants. Chad and his staff have already provided an estimated 28,000 meals since 2017. -Chicken Thighs (with skin and bone-in about 5-7 pieces)
-Onion (1 large regular onion)
-Garlic ( 5 cloves)
-Garlic Salt (to taste)
-Pepper (to taste)
-Portuguese Sausage (1 large mild)
-Beef Broth (3-4 cups)
-Diced Tomatoes (1-can)
-Carrots (1-small bag baby carrots 12oz)
-Celery (3 stalks)
-Purple Sweet Potatoes (3-4 small/medium sized)
-Pinto Beans (1-can)
-Dark Red Kidney Beans (1-can)
-Cabbage (half a head)
-Mild Curry Block (1- Block)


Cooking Process:

First -Brown/Sauté (in the InstantPot):
-Chicken Thighs (with skin and bone-in about 5-7 pieces)
-Onion (1 large regular onion)

-Pepper (to taste)

Add-in and Sauté:
-Portuguese Sausage (1 large mild)

Then Add-In
-Beef Broth (3-4 cups)

Set Instant Pot to “Meat/Stew” setting for a 35-minute pressure cook.
