Curried Breakfast Potatoes

These potatoes taste great alone or as a side dish, but if you really want to step it up, scramble up two eggs and bake your potatoes into a breakfast soufflé!

  • 3 red skin potatoes diced 
  • 1 orange bell pepper diced 
  • 1/2 red onion diced
  • 3 Hawaiian chili peppers minced (optional)
  • 2 garlic cloves minced 
  • Fresh ground pepper 
  • Turmeric 
  • Cumin 
  • Extra Virgin Olive Oil

Cooking Process:

Oil your pan w EVOO, season potatoes, peppers, garlic & onions w turmeric, cumin, salt & pepper. 

Bake on 400 For 25-35 min.

Half way through stir/move potatoes around so they bake evenly. 

*you can also pan sauté these.
