Slow Cooker Minestrone Soup

A very nutritional and tasty soup; all prepared in your slow cooker. Feel free to add sliced, cooked sausage or serve as is. A great vegetarian recipe.

Slow Cooker Minestrone Soup

2 TB olive oil

2 cloves garlic, chopped 

1 large onion, chopped

3 stalks celery, chopped 

2 medium carrots, chopped

1 large zucchini, chopped

1 large potato, peeled, chopped

2 (15 oz.) cans tomatoes, with liquid

4 (14 oz.) cans chicken broth

1 (15 oz.) can kidney beans

1 tsp. Italian seasoning

Pinch garlic salt

Pinch freshly ground black pepper

1 c. elbow macaroni

Garnish: grated Parmesan cheese


Cooking Process:

In a slow cooker; combine all ingredients except macaroni. Cover and cook on Low setting 6-8 hours. Turn  to HIGH setting, add macaroni; continue cooking 30-45 minutes until macaroni is cooked through. Garnish with cheese. Serves 6.
