Gordon Lum comes from the family that created Lum's char siu sauce which is still sold worldwide in stores.  We met Gordon through Popo June Tong who was also a guest on our Cooking Hawaiian Style TV show.  Gordon's spare ribs with black bean sauce is made the old, traditional way with lots of love.

One of my favorite ways to eat lechon kawali is with tomatoes and onions. Lechon kawali is similar to the crispy Chinese roast pork - so feel free to use that as well.  I just get mine from a Filipino restaurant or in Chinatown.  You can also get a recipe off of this site as well and make your own.

This recipe is a mix of old family info and my customization. The traditional Portuguese name for the meat portion is Vinha d’Alhos which is very similar to Pork Adobo but dryer. My version creates more sauce at the end.  Da Pocho Moco: 1 Batch ( you can always double or triple )....

Quesadillas made Hawaiian Style - filled with smokey kalua pork (pulled pork), ortega chilies and cheddar cheese.  Top with fresh tomato salsa or better yet, a fresh lomi salmon dip. When in a rush, I just pickup some pre-made lomi salmon and frozen kalua pig... trust me, its easy and just as ono!
