Slow Cooker Local Style Kalua Pork or Chicken

3-4 lbs. pork butt/shoulder or chicken thighs

1-2 TB Hawaiian rock salt

2 TB liquid smoke

½ c. water

4 ti leaves

Cooking Process:

Cover bottom of a slow cooker with 2 ti leaves. Rub meat generously with salt and liquid smoke. Place on ti leaves. Add water. Place remaining ti leaves around outer edge of slow cooker. Cover and cook on Low setting 8-10 hours. Serves 6.

how to serve:

Serve slow cooker kalua pork  as a main dish, in dishes where you would normally use pulled pork or carnitas in mexican dishes.  Although kalua pork or kalua pig is an old traditional dish, modern-day adaptations include: kalua pig and cabbage, pulled pork sliders, taquitos, burritos, nachos, quesadillas....just to name a few.  Enjoy!
