Tahitian Lanai Banana Muffins

¾ c. butter, softened

1 c. sugar
3 large eggs, beaten
½ c. overripe bananas, mashed
¼ tsp. vanilla extract
¼ tsp. banana flavoring

2 c. cake flour
¾tsp. baking soda
¼ tsp. salt

Cooking Process:

Preheat oven to 350 degrees; generously grease 24 muffin cups. In a mixing bowl; cream together butter and sugar until light and fluffy. Add beaten eggs, banana, vanilla extract and banana flavoring; mixing well. Sift together flour, soda and salt. Add to banana mixture; do not overmix. Spoon into prepared muffin cups. Bake 20 minutes until golden brown. Makes 2 dozen.

Love this recipe! I use a mini-muffin pan, and I grease the pan with coconut oil.
