US Metric

1 c. dry lentils, rinsed
1 small carrot, peeled, chopped
2 stalks celery, chopped
1 small onion, chopped
2 cloves garlic, minced
1/2 tsp. basil
1/2 tsp. oregano
1/4 tsp. thyme
1 bay leaf
2 (14.5 oz) cans vegetable broth
1 1/2 c. tomato juice
2 TB apple cider vinegar

Cooking Process:

In a slow cooker; place all ingredients. Cover; cook on Low Setting for 8-9 hours or on High setting for 4-5 hours. Remove bay leaf. Stir in vinegar. Serves 6.
