Skewered Bacon-Wrapped Shrimp

This Skewered Bacon-Wrapped Shrimp recipe was adapted from one of my sister’s favorite go to appetizer dishes to prepare for our family. Big, tender shrimp in a delicious marinade wrapped in bacon and grilled to perfection.

wooden skewers, soaked in water 30 minutes

1 ½ lbs. shrimp (20-25 count), shelled, deveined, tails left on or off

1 lb. bacon, cut in half


2 tsp. paprika
½ tsp. cayenne pepper
½ tsp. curry powder
½ tsp. ground cumin
½ tsp. ground coriander
½ tsp. salt
½ tsp. freshly ground black pepper
1 TB olive oil
2 TB brown sugar
2 TB fresh lemon juice

Cooking Process:

Line a baking sheet with aluminum foil. Set aside. In a large heavy skillet, partially cook bacon over moderate heat. Do not allow pieces to crisp. Drain on paper towels. When cool enough to handle; wrap each-slice of bacon around each shrimp and thread 2-3 on a skewer. In a medium bowl, combine marinade ingredients well. Add shrimp and cooked bacon, and toss well to coat. Let marinate at room temperature for 30 to 60 minutes, stirring occasionally. Place prepared skewers on sheet pan; drizzle any remaining marinade over skewers. Brush grills/grill rack with oil. Grill skewers until the bacon begins to crisp. Turn skewers over and grill until bacon is crisp and shrimp is cooked through. Serves 6-8.
