We are blessed with wonderful cooks in our family. This Cy’s Crab Stuffed Mushrooms is an appetizer that my brother prepared for a family gathering. Succulent and cheesy goodness.

1 TB + 2 TB butter

24 fresh mushrooms, stems removed & finely chopped

2 TB butter

2 TB green onion, minced

1 tsp. lemon juice

1 c. crabmeat

1/2 c. soft bread crumbs

1 egg, beaten

1/2 tsp. dried dill weed

1/4 c. + ½ c Monterey Jack cheese, shredded, divided

1/4 c. white wine

Cooking Process:

Preheat oven to 400 degrees. Generously grease a 9x13 inch baking dish with 1 TB butter. Arrange mushroom caps in pan, set aside. In a saucepan over medium heat; melt 2 tablespoons of butter. Stir in chopped mushroom stems and green onions. Cook 3 minutes until softened. Remove from heat. Stir in lemon juice, crabmeat, bread crumbs, egg, dill weed and 1/4 cup Monterey Jack cheese until well blended. Stuff mushrooms generously with crab mixture. Top with remaining cheese. Pour wine into pan. Bake 15-20 minutes, until cheese is melted and tops are lightly browned. Serve warm. Serves 6-8.
