

Deep Fried Haupia
You can serve deep fried haupia as a condiment/side dish typically with curry or in this case as a dessert paired up with ice cream or your favorite toppings. Either way, deep fried haupia is one of my favorites! I use milk instead of water in my recipe to give the haupia a richer texture.





13.5 ounces coconut milk
13.5 ounces milk
1 Cup Sugar
3/4 cup cornstarch dissolved in 1/4 cup water
Vegetable oil for frying
Coating:
1 cup flour
1 egg, beaten
1 cup panko
Heat coconut milk, milk, sugar until dissolved and bring to a boil. Add cornstarch mixutre and stir constantly until mixture is smooth and fully thickened. Pour into an 8" square pan and refrigerate until firm.
Cut haupia squares, dip pieces into flour, then egg, then panko. Deep fry until golden brown.
Serve with icecream and/or your favorite toppings!!
