Simple Somen Champuru

Champuru is an Okinawan word for "mix". You can throw different ingredients into a pan and fry them.  My favoriite is Somen Champuru. This is a very simple recipe using only a few ingredients - somen, Spam, and bok choy. If you like, you can throw an egg at very last.  Garnish with chopped green onion and "beni shoga" (red ginger).

(Serves 1)

  • 1 bunch somen noodle
  • Spam - a few slices, cut into match sticks
  • 1 bunch bok choy - clean and chop into bite size
  • 1 tbsp oil to fry
  • 1 tsp dashi power (such as Hondashi)
  • 2 tbsp Aloha shoyu
  • chopped green onion for garnish
  • chopped beni shoga (red ginger) for garnish

Cooking Process:
  1. Cook somen as instruction
  2. Heat oil in a big pan or wok
  3. Stir fry Spam and bok choy until white part of bok choy is cooked, but not soft
  4. Add somen and cook a few more minutes, stir constantly so that somen does not stick on the bottom of the pan
  5. Add dashi and mix well
  6. Add shoyu and stir

Done!  Top with chopped green onion and beni shoga.
