This Mandarin Orange Tofu Salad is a variation of my sister’s creation. A light and refreshing recipe to enjoy as an appetizer or as an entrée.

Ingredients: Print   Add to cart

8 oz. fried tofu, cubed
1 (10 oz.) can mandarin oranges, drained
6-8 c. mesclun greens
6 stalks green onion, chopped
1 cucumber, peeled and thinly sliced
3 oz. feta cheese, crumbled
¼ c. slivered almonds
½ c. won ton pi chips
¼ c. orange juice
¼ c. vegetable oil
1 tsp salt
½ tsp. freshly ground black pepper
2 garlic cloves, grated
1 tsp. ginger, peeled, grated
2 TB fresh lemon juice
1 tsp. agave nectar

Cooking Process:

In a large salad bowl, toss together lettuce leaves, tofu, cucumber, green onion and orange segments. Top with almonds, cheese and won ton pi chips. In a small jar; combine dressing ingredients.

how to serve:
Shake well for service. Serves 4-6.
