I have lots of memories of my school lunches. Most are great memories, some not quite as good as others. Back in those days, we never had a schedule like the schools have today. You knew what was being served, by the aromas of the day. This School Time Spanish Rice Con Carne was one of my “look forward to” favorites.

US Metric

2 c. long-grain rice

3 c. water for 15 minutes

2 TB vegetable oil

2 lbs. ground beef, chicken or turkey (not turkey breast)

1 small green bell pepper, minced

1 small onion, minced

3 cloves garlic, minced

2 stalks celery, minced

2 (15 oz.) cans diced tomatoes, with liquid

1 (6-oz.) can tomato paste

1 1/2 TB Worcestershire sauce

2 tsp. chili powder

1 tsp. salt

1 ½ tsp. sugar

½ tsp. garlic salt

Dash Tabasco sauce

Cooking Process:

Preheat oven to 350 degrees.In a saucepan over medium heat; bring rice and water to a boil. Reduce heat; simmer 15-18 minutes. Remove from heat; set aside. In a skillet over medium heat; brown ground beef in oil with bell pepper, onion, garlic and celery. Cook until vegetables are tender and beef is cooked through. Transfer into a mixing bowl. Add rice and remaining ingredients. Transfer mixture into a 9x13-inch baking dish. Cover and bake 35-40 minutes. Serves 6-8.
