Salt & Pepper Shrimp

A very familiar recipe traditionally seen on Chinese Restaurant menus. I love pork chops and chicken prepared in this manner, but the shrimp is a winner as well ! I love it for it’s simplicity.

1 lb. large shrimp

2 TB cornstarch

1 tsp. kosher salt

½ tsp. freshly ground black pepper

¼ tsp. Szechuan peppercorn

3 TB vegetable oil

1 garlic clove, minced

1 chili pepper, seeded, minced

Cooking Process:

In a mixing bowl; toss the shrimp with cornstarch. In a small mixing bowl, combine salt and peppers. In a wok or large skillet over medium high heat; stir fry the shrimp in half of oil until just turning pink. Remove from wok. Into wok; heat the remaining oil. Add garlic, chili pepper and salt mixture. Stir-fry until fragrant, about 10 seconds. Return shrimp to wok. Stir-fry until shrimp is coated with salt and pepper mixture. Serve immediately. Serves 3-4.
