Coconut Flavored Valentines Fortune Cookies

Valentine's is just a week away.  This year, why not make Valentine's extra special by making your own homemade heart-shaped and decorated fortune cookies with you own special message.  I also included a quick video so that you can see how easy it is to fold and make these.

Fortune Cookie

1 egg white

1 1/2 Tablespoons vegetable oil

4 Tablespoons Flour

1 Teaspoon Cornstarch

4 tbsp sugar

1/8 tsp salt

1 1/2 Teaspoons Coconut Milk

1/4 Teaspoon Coconut Extract

** For something different, try adding furikake in the batter or coating with chocolate and crushed arare (rice crackers) or sesame seeds.  Get creative!!

Cooking Process:

Preheat oven to 300 °F.

Beat egg white and oil. Add remaining ingredients and mix well.  Grease cookie sheet well and

drop approximately 1 teaspoon of batter onto cookiesheet and using a circular motion, form a circle.  You can add more batter and make giant fortune cookies if you desire.

Bake for aboutt 10 minutes or until the outer edges become brown. Remove one cookie from oven with spatula or metal spoon. I would recommend using gloves.  Watch video to see proper folding and handling method.
