Spam Vegetable Tempura
At one of my neighborhood Okazuya -style take out places, one of their specialty dishes is an eggplant stuffed with spam and made tempura style. This recipe pairs not only our favorite spam but your typical tempura vegetables for a surprisingly delicious treat.
Oil as needed, for frying
1 (12 oz) can Spam, thinly sliced
12 oz. green beans, thinly sliced, slivers
3 medium carrots, peeled, thinly sliced, slivers
3 stalks green onion, 1 ½-inch pieces
1 c. all purpose flour
1 c. “cold” water
1 large egg
½ tsp. salt
1 c. dashi stock
¼ c. Aloha shoyu
¼ c. mirin
½ TB sugar
1 TB daikon (turnip) grated
In a large deep pan or fryer; heat oil. In a large mixing bowl; combine batter ingredients. Stir in spam and vegetables. Drop mixture by heaping tablespoonsful. Fry until lightly browned. Drain on paper towels. Serve with Tempura Dashi Sauce. Sauce: In a saucepan over medium heat; combine dashi, soy sauce and sugar. Bring to a boil. Remove from heat.
For service, add daikon. Optional to serve sauce hot or at room temperature. Makes 1 ½ cups. Serves 6-8.
