3 1/2 lb. whole chicken fryer

2 TB Hawaiian salt

2 TB dry sherry

2 TB dark brown sugar

2 TB Aloha shoyu

1 TB Chinese five spice

3 TB oyster sauce

4 stalks green onion

4 stalks cilantro

2 slices ginger, smashed

Cooking Process:

In a small mixing bowl, combine salt, sherry, sugar, soy sauce, five spice and oyster sauce. Rub over entire chicken and inside cavity. Marinate 4 hours. Preheat oven to 375 degrees. Place green onion, cilantro and ginger into the cavity of chicken. Bake for 30 minutes. Increase oven heat to 400 degrees and continue baking for 30 minutes, checking for doneness.
