Fried Pork Belly Adobo

My sister prepared this for a family outing pupu dish. It was a big hit, gobbled up by all. Crispy and flavorful thinly sliced pork belly, marinated in a Filipino-style adobo sauce and fried to perfection.

2 lbs. pork belly, thinly sliced

¼ c. cider vinegar

¼ c. water

2 TB Aloha shoyu

6 black peppercorns

2 cloves garlic, crushed

2 bay leaves, crushed

Oil as needed, for frying

Cooking Process:

In a mixing bowl; combine pork with remaining ingredients. Marinate 2 hours. In a large skillet or deep fryer; warm oil. Deep fry pork until crisp. Drain on paper towels. Variation: Dredge pork in mixture of equal parts of flour and cornstarch before frying. Great served with Patis Seasoned Chili Pepper Water. Serves 6-8
