A quick and easy appetizer dish. Sometimes enjoyed as a main entrée; I enjoy this Simple Fried Tofu Patties served on top a bed of shredded cabbage with my favorite hot sauce.

2 (14 oz.) blocks firm tofu, drained well
4 small fresh shiitake mushrooms, thinly sliced
½ small carrot, peeled, thin slivers
1/2 c. green onion, chopped
2 tsp. sake
2 tsp. Aloha shoyu
½ tsp. brown
pinch salt, as needed
1 TB flour

Vegetable oil, as needed for frying

Cooking Process:

Place the tofu in a colander; place a flat plate on top of tofu; weigh it down with a cup of water or a canned goods. Allow to drain 1 hour. In a mixing bowl; crumble tofu. Add sake, soy sauce, sugar, salt and flour; mix well. Add mushrooms, carrot and green onion. Shape into desired sized patties. In a large skillet over medium heat; fry patties in oil until lightly browned on both sides. Serves 4-6.
