A light and refreshing summer salad served with a tangy, citrusy vinaigrette. Feel free to add apples, orange wedges, grapefruit, tangerine or mandarin oranges, carrots, red peppers....whatever you want.

1 (10 oz.) block firm tofu, cubed

½ bunch watercress, 1-inch slices, blanched

½ c. green onion, green parts only, chopped

2 c. fresh spinach, coarsely chopped

Garnish: toasted sesame seeds, pickled ginger, sliced


Citrus Miso Vinaigrette:

2 TB red miso paste

2 TB orange juice

2 TB fresh lemon juice

2 TB vegetable oil

1 TB rice wine vinegar

1 TB ginger, peeled, grated

freshly cracked black pepper
