Thai Fried Pork

This recipe was created for a Thai themed pot luck party. After having a meal at my favorite Filipino restaurant and enjoying the Fried Pork Adobo, I tried to re-create that dish incorporating those wonderful Thai flavors.

2 lbs. boneless pork, 1-inch strips

½ c. cornstarch

2-4 TB peanut oil

2 c. shredded cabbage

1 Japanese cucumber, thinly sliced

Garnish: fresh cilantro sprigs, lime wedges


4 cloves garlic, minced

2 TB sugar

2 tsp. oyster sauce

2 tsp. chili garlic paste

2 tsp. patis (fish sauce)

2 tsp. chili powder

2 tsp. white pepper

pinch salt

2 TB Aloha shoyu

2 TB rice wine vinegar

dash Tabasco

Cooking Process:

In a mixing bowl, combine pork and marinade ingredients. Let stand 15 minutes. On a serving platter; arrange cabbage and cucumber; set aside. In a shallow dish; place cornstarch. Remove pork from marinade, reserving marinade. Dredge in cornstarch. In a skillet over medium heat; brown pork in oil. Transfer onto platter. In a separate pan, bring reserved marinade to a boil stirring until thickened. Drizzle sauce over fried pork. Sprinkle with cilantro; serve with lime wedges. Serves 4.
