Jalna’s Miso Butterfish

Growing up, this dish was my only association with Miso. It is always a special treat, simply because the fish normally marinates for 3-4 days ! My sister’s version, is prepared much more quickly, with same results!

2 ½ lbs. butterfish/black cod, mahi mahi or ono, filets

1/2 c. sugar

1/4 c. sake

1/4 c. mirin

1 c. yellow miso paste
1 TB Aloha shoyu

Cooking Process:

In a saucepan over medium heat; bring sugar, sake and mirin to a boil. Boil 10 minutes; stirring until sugar dissolves. Reduce heat; whisk in miso and soy sauce until mixture is creamy. Cool mixture. Marinate fish 12 hours . Pre-heat oven to 450 degrees. Place fish onto foil lined baking sheet. Bake 18-20 minutes. Turn oven to broil. Broil 2-3 minutes until fish is charred on top. Serves 5-6.
