Chinese Spiced Fried Chicken

Chinese five spice chicken - Fried chicken seasoned with Chinese 5 spice - I had a similar dish recently at a wedding buffet at one of our Waikiki Hotels. Knowing this hotel a popular Chinese Restaurant on the property, I went back and picked up a take out order of their chicken. I make this often for a twist on a classic.

US Metric

3-3 ½ lb. fryer, cut into 8-10 pieces


2 cloves garlic, minced

½-inch ginger, peeled, grated

2 TB Shaoxing wine

2 TB Aloha shoyu

1 tsp. salt

1 tsp. sugar

1 tsp. Chinese 5 spice

¼ tsp. white pepper

Vegetable il as needed, for frying

Finishing Salt:

1 tsp. salt

1 tsp. Chinese 5 spice

pinch white pepper

Cooking Process:

In a shallow dish or zip lock bag; combine marinade ingredients well. Marinate chicken 2-3 hours; rubbing marinade into chicken. In a wok or deep fryer; warm oil. Deep fry until golden brown. Drain on paper towels. In a small bowl; combine finishing salt. Sprinkle generously on fried chicken. Serve immediately. Serves 4-5.
