Grace’s Mom’s Fried Chicken

Having tried this at a after game get together, I had to ask for the recipe. Crispy, crunchy and very flavorful. You can use drummettes, chicken thighs, drumsticks or simply a whole fryer cut up; just allow for longer cooking times.

2 ½ - 3 lbs. chicken thighs, boneless, skinless, 2-inch pieces

1 large egg

½ c. cornstarch

Vegetable oil as needed, for frying


2 cloves garlic, crushed

½-inch ginger, peeled, crushed

2 TB Aloha shoyu

3 tsp. sesame seed oil

2 tsp. Shaoxing wine

1-2 tsp. chili garlic paste, as desired

1 tsp. salt

1 tsp. sugar

¼ tsp. white pepper

Cooking Process:

In a shallow dish; combine marinade ingredients well. Marinate chicken 2-3 hours; rubbing marinade into chicken. In a mixing bowl; beat together egg and cornstarch. Stir into chicken; combine well. In a wok or deep fryer; warm oil. Deep fry until golden brown. Drain on paper towels. Serve immediately. Serves 3-4.
