4 green mangoes, peeled, thinly sliced, seed discarded

Hawaiian salt, as needed

1-2 TB li-hing mui powder

how to serve:

Place mangoes in a colander; generously sprinkle with Hawaiian salt. Toss well to salt slices of mango. Place a plate with a heavy weight (canned good or large measuring cup filled with water) onto mangoes. Allow to sit 2-4 hours. Rinse well; drain completely. Toss with li-hing mui powder as desired. Serves never enough.
