Black Bean Beef & Bittermelon

Bittermelon is one of those ingredients that people either love it or hate it. For me, I can’t get enough of it. While I love it stuffed and steamed, I also love this Black Bean Beef & Bittermelon version; cooked in a black bean sauce. One-Pot stir fry dishes are a must for me during the week; since it takes so little time.

Ingredients: Print   Add to cart
US Metric

1 ½ lbs. beef sirloin, thinly sliced

1 TB dry sherry

½ tsp. salt

¼ tsp. white pepper

¼ c. cornstarch

2 bittermelon, halved lengthwise, seeded, thinly sliced

1 TB+1 TB vegetable oil

3 cloves garlic, minced

2 TB salted black bean, crushed

Black Bean Sauce:

1 (14.5 oz) can chicken broth

2 TB Aloha shoyu

2 TB oyster sauce

2 TB cornstarch

1 TB mirin

½ tsp. sesame seed oil

Cooking Process:

In a mixing bowl; season beef with sherry, salt and pepper. Toss in cornstarch. Allow to sit 10 minutes. In a small bowl; combine sauce ingredients. Set aside. In a wok or large skillet over medium high heat; warm 1 TB of oil. Stir fry beef until cooked through. Remove from wok; set aside. Into wok; add remaining 1 TB of oil. Stir fry garlic, black beans and bittermelon until bittermelon is slightly limp. Return beef to wok. Re-stir sauce and add to wok; bring to a boil. Reduce heat; stirring until thickened. Serves 3-4.
