A quick and easy Stir-fry Shrimp and Vegetables dish. In a pinch, you can prepare this recipe; simply using your pantry items.

US Metric

1 lb. shrimp, deveined, peeled

1+1 TB vegetable

2 cloves garlic, finely minced

½-inch ginger, peeled, grated

½ large carrot, peeled, sliced into coins

1 (15 oz.) can baby corn, rinsed, drained

1 (15 oz.) can straw mushrooms, rinsed, drained

1/2 lb. Chinese snow peas, ends trimmed


1 TB oyster sauce

1 TB Aloha shoyu

½ TB dry sherry

1 tsp. cornstarch

½ tsp. salt

¼ tsp. white pepper

Cooking Process:

In a bowl; combine marinade ingredients; marinate shrimp 10 minutes. In a wok or skillet over medium high heat; warm 1 TB of oil. Stir fry shrimp 30 seconds. Remove  shrimp to a plate.  Return wok to medium high heat; warm  remaining 1 TB of oil. Stir fry carrot 1 minute. Add garlic and ginger; stir fry10 seconds. Add baby corn, mushrooms and snow peas.  Stir fry1-2 minutes. Return shrimp back to pan. Cook 1-2 minutes until shrimp is heated through. Serves 3-4.
