Classic Banana Coconut Pudding

Remember the good old banana pudding made with nilla wafers? We used to make it all the time, especially for sleepovers. This is a slight twist on that childhood classic using coconut pudding, bananas, crushed honey roasted macadamia nuts and good old Nilla wafers!!

  • 3 tablespoons butter
  • 1/4 cup flour
  • 1 cups milk
  • 2 cups coconut milk
  • 2/3 cup light brown sugar
  • 3 egg yolks
  • pinch of salt
  • 1/2 teaspoon vanilla
  • Nilla wafers
  • Honey roasted macadamia nuts, crushed
  • 3 ripe banana's
  • whipped cream (fresh or canned)


Cooking Process:

In a large pot, melt the butter over medium heat, then whisk in the flour until a thick paste forms. Slowly whisk in the milk and coconut milk. Add the brown sugar, and yolks, whisking until smooth. Continue whisking over medium heat until thickened. Once thickened, remove from heat and whisk in salt and vanilla.  Layer pudding, sliced bananas, Nilla wafers, honey roasted macadamia nuts and fresh whipped cream in individual glasses.  Serve warm or cold.
