Asparagus w/Wasabi Soy Dressing
This Asparagus with Wasabi Soy Dressing recipe is a great way to enjoy fresh asparagus... try grilling for a flavorful treat!
- 2 bunches asparagus
- green onions
- 2 tablespoons toasted sesame seeds, to garnish (optional)
- 2 inch piece ginger
- 4 tablespoons Aloha shoyu
- juice of 1 lemon
- 1/2 teaspoon wasabi, to taste
- 1/3 cup vegetable oil

Trim and scrape ends of the asparagus. Cut each spear into 3 equal pieces, separating the tips from the stems.
Cook the stems in salted boiling water for 3-5 minutes or 7 minutes covered in the microwave or grilled for 5-7 minutes.
Peel & grate the ginger, add soy sauce, lemon juice and wasabi. Whisk well together, then whisk in the oil a little at a time. Taste and add more wasabi/oil if you like.
Thinly slice the spring onions on the diagonal and toss them into the dressing. Add the asparagus stems and turn gently to coat.
