

Pork & Squash
A very simple, “feel good” Pork & Squashdish… quick and easy to prepare. A pork stew with squash makes a savory, hearty, and budget-friendly meal for winter.

Prep Time: 10-15 minutes | Cook Time: 25 minutes | Ready In: 35-40 minutes
2 ½ - 3 lbs. long squash, 2-inch pieces
water as needed
1/4 lb. pork, thinly sliced
1 TB cornstarch mixed with 1 TB water
Seasonings:
2 1/2 c. dashi or chicken broth
3 TB mirin
1 TB brown sugar
2 tsp. Aloha shoyu
1 tsp. salt
Garnish: Grated ginger
Cooking Process:
In a saucepot over medium heat; cover squash with water. Parboil 3-4 minutes. Drain well. Into saucepan; combine seasonings and bring to a boil. Add squash and pork into saucepan. Reduce heat to love; cover. Cook 20 minutes. Stir in cornstarch slurry until slightly thickened. For service; garnish with ginger. Serves 4-6.

Very quick and easy recipe. I added a little sake and bonito flakes to inhance the flavor. Would make this again.
