Island Coffee Cake

Adapted from a recipe I enjoyed while staying at a Bread & Breakfast spot in Sonoma, this version incorporates all the favorite flavors of the islands, pineapple, coconut and macadamia nuts.

8 oz. sour cream

½ c. vegetable oil

2 large eggs

1 c. sugar

1 ½ c. all purpose flour

2 tsp. baking powder

1 tsp. cinnamon

½ tsp. allspice

½ tsp. salt

1 (8 oz.) can crushed pineapple, drained

1 c. macadamia nuts, chopped

1 c. shredded coconut

1/3 c. sugar

1 tsp. cinnamon

Cooking Process:

Preheat oven to 325 degrees. Generously grease a 8x8-inch baking pan. In a mixing bowl; whisk together sour cream, oil, eggs and sugar. Stir in dry ingredients well. Pour mixture into prepared pan. In a separate bowl; combine pineapple, nuts, coconut, sugar and cinnamon well. Sprinkle over batter in pan. Bake 40-45 minutes. Serves 6-8.
