Bananas Foster

One of my favorite desserts of all time. A variation from a recipe prepared tableside at a Fine Fining Restaurant in Waikiki, I love the addition of orange juice and orange liquor.

French vanilla ice cream

2 TB butter

┬╝ c. brown sugar, lightly packed

juice of 1/2 fresh orange

1/2 tsp. cinnamon

4 TB orange liqueur

3 TB dark rum or brandy

2 bananas, sliced

Cooking Process:

Spoon ice cream in serving dishes. Place in freezer until ready for service. In a saucepan, over medium-high heat, melt butter, add sugar and orange juice. Add cinnamon, stirring until sugar is dissolved. Turn heat to high; add orange liqueur, rum and bananas; ignite. Remove from heat when bananas are heated through, about 1 minute. Serve over ice cream. Serves 4.
