serves 8

  • 5 tablespoons olive oil
  • 3 large onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chilli flakes
  • 2 tablespoons tomato purée
  • 2 cups hot water
  • good handful chopped fresh parsley
  • salt to taste
  • 1/2 teaspoon freshly ground black black pepper
  • 2 teaspoons paprika
  • 1 pkg frozen baby broad beans

Cooking Process:

Heat oil in a large saucepan over medium heat. Cook onion and garlic until golden brown. Stir in chillies, tomato purée, hot water, parsley, salt, pepper and paprika. Bring to the boil, add broad beans and reduce heat. Simmer for 30 minutes, or until beans are tender.
