Baclau - Classic Portuguese codfish dish prepared with potatoes and cracker crumbs.
- 1 piece of Cod from the thicker part
- 2-3 potatoes
- 1/4 cup olive oil
- 1 onion
- 2-3 cloves garlic
- 1 cup maize bread crumbs
- black olives
After the cod is soaked you grill it (preferably in the wood), slowly until it is cooked. When cooked you'll have to take and divide it into small pieces (with your hands).
At the same time you have to wash the potatoes and boil them without removing the skin.
On med heat, saute' garlic and onion. You may add some spices to your own taste.
break corn bread into big crumbs. Mix all ingredients in large bowl, pour oil, onion, garlic mixture on top, add more olive oil if necessary, cover with maize bread crumbs and olives on top for decoration.
Bake on 375 for 15-20 minutes to brown.
