Coconut Mochi Crepes w/Ice Cream & Coconut Whipped Cream

This is a really easy dessert that can be assembled in a snap and the crepes can be made ahead of time and frozen if you wish.  If you love mochi, you will love the consistency of these coconut mochi crepes.

  •  Coconut, Haupia or favorite Ice Cream
  • Chocolate Syrup (optional garnish)
  • Macaroon Cookies (optional garnish)
  • Shredded Coconut (optional garnish)


  • 3 large eggs
  • 1 teaspoon granulated sugar
  • 1/4 cup all-purpose flour
  • 3/4 cup mochiko (sweet rice flour)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 2 cups coconut milk
  • butter or cooking spray for coating the pan

Coconut Milk Whipped Cream

  • 1 Can Coconut Milk (14 ounces)
  • 2 Tbs Powdered Sugar
  • 1/2 tsp Vanilla


Cooking Process:

Mix the flours, sugar, eggs and salt until the mixture is smooth. Be sure not to over-mix. Add the coconut milk 1/3 cup at a time, until the batter is a liquid consistency.

Melt a little butter in a crêpe pan or large skillet over low-medium heat. Add 3 tablespoons of batter to the pan (or slightly more if using a large skillet) and swirl until the bottom of the pan is covered with batter.

Cook the crêpe for 1 minute, or until the crêpe is slightly moist on top and golden underneath. Loosen the edges of the crêpe, slide the spatula under it, and then gently flip it upside down into the pan. Cook for 1 minute and transfer the cooked crêpe to a plate to keep warm.


Coconut Milk Whipped Cream

Put can of coconut milk and mixing bowl in the refrigerator overnight. Set beaters in freezer for a few minutes before you begin.  Open can and remove all the solid coconut cream (leaving about 1/4 can of coconut water).  Mix cream in chilled bowl, with chilled beaters until fluffy (3 minutes or so).  Mix in powdered sugar and/or any other flavoring.  If you want, you can use a 1/2 coconut milk, 1/2 heavy whipping cream mixture instead of all coconut milk.


how to serve:


Fill crepe with whatever you desire ie. ice cream, haupia pudding, or just whipped cream.  Top with a big scoop of ice cream, coconut whipped cream, shredded coconut, coconut macaroons and chocolate syrup!
