

Miso Meatballs w/Gravy
Miso meatballs - this is similar to hamburger steak, but in the form of a meatball with a miso-brown gravy.
- 1 pound lean ground beef or pork
- 1/4 cups onion, finely chopped
- 2 teaspoons garlic, minced
- 1 egg, beaten
- pinch of red pepper flakes
- 3/4 cup panko or bread crumbs
- 2 Tablespoons Miso
- 4 Tablespoons oil for frying
Miso Gravy
- 2 tablespoons butter
- 2 tablespoons miso
- 1/4 cup flour
- Can beef broth
In a large bowl, combine beef, onion, garlic, egg, pepper flakes. Add panko to the meat mixture and mix well. If the mixture seems to dry, add water or milk, 1 Tb. at a time, for moisture (and if it's too wet, add more panko). Stir in the miso and mix well to combine. Shape into 1-2 inch meatballs and cook in frying pan with oil. Once the meatballs are cooked, remove from frying pan. Add 2 tablespoons butter to pan and loosen carmelized bits. Add 1/4 cup of flour and cook until golden brown, stirring constantly with fork or whisk, add miso paste and beef broth a little at a time until you achieve the desired thickness... Add meatballs back into pan and allow to simmer covered for 5 minutes. Garnish with cilantro if desired.
