Leftover Chicken Adobo Fried Rice
Leftover Chicken Adobo Fried Rice - A great way to use up any leftover adobo and rice!
- 4 cups cooked rice
- 1 cup leftover chicken adobo, shredded
- 4 tablespoons chicken adobo fat or vegetable oil
- 2 eggs scrambled
- salt & pepper to taste
- 4 tablespoons adobo gravy
I also used leftover corn and some cilantro that I had in the refrigerator...
Heat large skillet or wok with fat from the chicken adobo. Add shredded pieces of leftover adobo, rice, corn or whatever ingredients you want to add. Spoon adobo gravy onto the sides to create steam. Toss until all ingredients are heated-through and mixed well. Push rice to one side of the pan and add more adobo fat or vegetable oil. Add scrambled eggs to the pan and cook until soft scrambled, then mix into rice. Season with salt & pepper to taste. Serve hot! Garnish with cilantro or green onions if you want.
