  • Coconut Taro Roll Recipe
  • 2 packets active dry yeast
  • 1/2 cup lukewarm water
  • 2/3 cup butter, melted
  • 3/4 cup sugar
  • 1 teaspoon salt
  • 1 cup coconut milk
  • 3 large eggs, beaten
  • 1 cup cooked taro, mashed
  • 6 cups all purpose flour

Homemade Coconut Butter

  • 2 cups unsweetened, dried coconut flakes
  • 4 tablespoons butter
  • 1/4 cup powdered sugar

Cooking Process:

To make this coconut taro roll recipe, in a small mixing bowl, dissolve yeast in lukewarm water.  Pour coconut milk into a mixing bowl, add mashed taro, butter, sugar and salt. Allow to cool, about 2 minutes. Into milk mixture; stir in eggs and yeast mixture. In a large bowl, place flour. Make a well in the center. Add liquid mixture. Mix thoroughly until dough comes together and is stiff. On floured work surface; turn dough out. Knead until smooth. Transfer dough into a well greased bowl; cover with a damp towel, let rise in a warm area until doubled in size, about 1 hour. Butter hands; punch dough down and divide into 32-34 portions. Shape into small balls and place onto prepared pans. Cover with a damp towel, let rise in a warm area until doubled in size and balls are touching each other, about 1 hour. Preheat oven to 350°. Bake golden brown about 15-20 minutes. Serve immediately with homemade coconut butter. Makes approximately 32-34 rolls.


Coconut Butter

Put coconut in food processor and run for 10-15 minutes.  Be sure to scrape sides occasionally.  If the texture is still gritty, continue to run until it is velvety smooth.  Once the coconut is completely smooth, slowly pulse softened butter into mixture, now add sugar.  Store in a jar in refrigerator.
