This is a delicious brownie recipe made with silky smooth tofu which is used to replace the unhealthy fat usually found in brownies and baked goods. These brownies are vegetarian and vegan if you use the right chocolate chips.
- 1 cup (8 oz) Soft Tofu, drained
- 2 tablespoons corn starch
- 1/2 teaspoon baking soda
- 1 cup sugar
- 3/4 cup flour
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 3 tbsp. cacao powder (unsweetened)
- 1/3 cup chocolate chips
Puree tofu in blender or food processor until silky smooth. Place tofu in mixing bowl and add in corn starch and baking soda with electric mixer. Combine all additional ingredients except chocolate chips and mix well.
Once batter is thoroughly mixed stir in chocolate chips.
Pour into greased baking tray and bake at 350° for 30 minutes.
