  • 1 lb boneless spare ribs
  • 1 egg, beaten


  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp curry powder
  • ¼ tsp pepper
  • 1 egg white
  • ½ tsp bicarbonate of soda
  • 1 tbsp cornstarch
  • 3 tbsp water


  • 2 tbsp thai chilli sauce
  • 3 bird's eye chillies, chopped
  • 1 tsp worcestershire sauce
  • 1 tsp curry powder
  • 1 tsp sugar
  • ½ tsp salt
  • 4 tbsp water

Cooking Process:

Rinse the spare ribs and cut into convenient pieces, drain well. Season with marinade, mix well. Marinate for 1 hr. Then dip with beaten egg and coat well with some cornstarch. Deep-fry into hot oil until extra crispy and golden. Remove and set aside.

Leave 1 tbsp oil in the preheated wok, pour in sauce mixture and bring to a boil and allow to reduce a little. Blend in fried spare rib pieces immediately, stirring constantly over a high heat until the spare ribs pieces are well coated with the sauce and syrupy.
