Island Style Coffee Cake

Adapted from a recipe I enjoyed while staying at a Bread & Breakfast spot in Sonoma, this version incorporates all the favorite flavors of the islands, pineapple, coconut and macadamia nuts (I ran out of macadamia nuts so I used walnuts today). Make big batches to share with your neighbors

  • 8 oz. sour cream
  • ½ c. vegetable oil
  • 2 large eggs
  • 1 c. sugar
  • 1 ½ c. all purpose flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp. allspice
  • ½ tsp. salt
  • 1 (8 oz.) can crushed pineapple, drained
  • 1 c. macadamia or walnuts, chopped
  • 1 c. shredded coconut
  • 1/3 c. sugar
  • 1 tsp. cinnamon

Cooking Process:

Preheat oven to 325 degrees. Generously grease a 8x8-inch baking pan.In a mixing bowl; whisk together sour cream, oil, eggs and sugar. Stir in dry ingredients well. Pour mixture into prepared pan. In a separate bowl; combine pineapple, nuts, coconut, sugar and cinnamon well. Sprinkle over batter in pan. Bake 40-45 minutes.  Serves 6-8.
